Creamy Mashed Cauliflower (V) (GF) & Roasted Scallops

This creamy delectable creamy cauliflower mash is very much fluffy and creamy like the good ole’ mash potatoes I used to eat back in the day in Michigan! It brought back all of those feelings as a kid wanting to slather those things in butter and I could practically eat 2-3 servings of nothing but mashed potatoes and leave all the other food behind. It was a huge hit at our house growing up.

You can take the girl out of the Midwest, but you cant take the Midwest out of the girl!

I did my best to recreate these in the most creamy and delectable way I could to emulate the joy I had eating those mashed potatoes as a kid.

Artichoke Turmeric Hummus (V, GF)

We eat a lot of hummus in our household and my husband recently told me store bought hummus keeps him up at night and makes him bloated. Although I like homemade hummus many times I just find it easier to buy it! I mean its right there, so easy! However, I don’t like all of the preservatives and the sugar! Regardless of how clean the hummus you find at the store, its still processed, has preservatives AND contains sugar. Hence the reason why my husband is so sensitive to it! And why I should be making it for our family.

Fudgy GF Chocolate Chip Cookies

It’s all about the fudginess of the cookies. I mean who doesn’t like a half cooked cookie with the doughy center? Come on! The absolute dream cookie! Am I right?!? The trick is the consistency in the beginning. This is where you really want to pay attention to the amount of almond milk. You may want to add more if needed. The batter should be fudgy and sticky. Easy Maple Walnut Granola with Blueberry Sauce

This is not only simple and you can do it in the crock pot or in the oven. I always prefer the crock pot because its low maintenance for me. However, feel free to use the oven and place on a baking sheet.

I love this combo because I’m always looking for a bit more flavor in my yogurt and I love jam but with the sugar content I’m hesitant to use it so I made this little blueberry syrup as an alternative and all l can say is….. GAME CHANGER! I really added so much to the dish without all the sugar!

Paleo Pumpkin Cheesecake (V,GF)

When I set out for this little experiment I really had no idea what the result would be - like most things I make. However, this one in particular I was hoping and praying as I went along my baking way! A few things about this recipes. Yes, its pumpkin, of course its almost OCTOBER! Second, it contains no gluten, has low glycemic index and can also be vegan. However, this particular recipe I did use eggs so therefore NOT vegan. An easy swap and you can make it vegan by using flax eggs.

One thing about my site is every single recipe is healthy! All of them I use natural sugars if I’m baking and I always use a grain substitute like chickpea flour, tapioca starch, almond flour, coconut flour and etc.

Spinach Artichoke Quinoa Salad

Looking to add some bulk to your salads? I find salads to be very unsatisfying and frankly I don’t opt for them often for that reason! I like to add some whole grains and fats to my salads and this is a great way to do that to keep things interesting, and filling!

With salads I don’t usually feel sustained energy and you may feel that way too if you are constantly running all day long! I always feel like I have energy longer and can maintain when I’m having a hearty lunch. By hearty I mean adding in some fats and whole grains.

Paleo Blueberry Pumpkin Seed Muffins

This recipe was inspired by my favorite coffee shop that serves the most amazing blueberry muffin.  I go there a few days a week to work and they have the absolute best cappuccino ever - strong and smooth - and I always get their paleo muffin.  Its a perfect blend of light and fluffy, tasty, blueberry filled, a bit of crunch and very filling!   I would eat one of these and be satisfied for at least 3-4 hours which if you know me, is quite a feat!  So after paying $4 for my favorite muffin several times and carefully studyihg each bite, I decided to give it a try and make it myself!

Blueberry Lemon Breakfast Bake

Yes, I know its been 9 days since I've posted a recipe but the creative juices just weren't flowin!  Ya hear me?  I mean it really takes some creative inspiration to come up with these recipes and really execute well so I have to do it when I'm in the zone.  And well today, friends I'm back in the zone!  

For this recipe you can really swap out to make it fully paleo or vegan and I'll give you some variations in the ingredients list.  Its very simple and however way you decide to spin it, I'm sure it will turn out to be bomb.

This bake has a sweet and cakey-vibe but then add in the lemon curd and.......daaaannnnggg.  Legit!  So I decided to add the curd till last minute and then wanted to stack it and make it a double decker delight with the custard in between just to create a more interesting looking dish.  However way to decide to make this, it will rock your taste buds.

Guilt Free Carrot Cake Bites

One of my favorite cakes ever is carrot cake! I’m not a huge fan of cake but if I’m gonna eat it, its gotta be carrot, or red velvet all the way. I tried this variation to make a cleaner and healthier version of some of my favorites. According to my husband, these turned out quite well!  It was a dabble in trying to create more "meat" friendly recipes.  Clearly as you can see by reading my blog and recipes that I do not eat meat, however that doesn't mean I don't prepare it.  My husband is a huge fan of all types of meat, poultry and I do make it for him on the reg!  This recipe was inspired by him wanting to eat chicken fingers - don't ask me why he had a craving but he was ready to order from the kids menu using our baby as an excuse to eat them!  Rather than him going that route, I decided I needed to try a new chicken recipe - and a healthy one at that - to help him satisfy his cravings:)

Garlic Butter Shrimp & Mushroom Risotto

This actually turned out much better than I expected and am VERY happy with the result!  The whole family enjoyed this one!  Total prep time was about 30 minutes and total cook time was about 15.  Overall 45 minutes for a delicious meal isn't bad!  If you add to this recipe you can create a meal for 2 dinners / 2 different days if you want!  I just happen to have a very hungry husband that never leaves leftovers!  I hope you enjoy!

Crock Pot Crack Nuts

The name is everything!  I couldn't think of a better description for these and this sounded right on!  So this is the easiest nut mix ever to create and it takes literally no prep time at all.  Throw them in the crock pot - or I guess if you have a modern day Insta Pot - and voila!  I'm still stuck in the stone ages and I happen to LOVE my crock post so if you have another means I guess you can just speed up the wait time for the deliciousness!

Miso Cod and Roasted Veggies

This recipe was life-changing for me to change my viewpoint of cod.  I mean I've enjoyed some pretty amazing cod at some spectacular restaurants in New York but aside from that, I've never had a thing for it.  I don't do fish often and when I do I don't typically choose cod.  However, because I was cruising the aisle at the local grocer I noticed some frozen wild cod and thought I'd give it a try.  Now this was a challenge because I had to make it tasty!  So I came home, went through all of my spices, oils and etc. and came up with a little marinade concoction that actually turned out to be quite delightful!
