Walnut Pesto Eggplant (V) (GF)

This recipe came to me in one of my dreams and maybe because I’m so in tune with this book that I’m reading, “Eat to Beat Disease” and it really has me thinking about each one of these foods and how to heal the body.

First I started dreaming of a walnut pesto, which I’ve had and tried various versions, but then I wanted to take it a step further and luckily I had a beautiful eggplant just sitting in my fridge just waiting to be eaten. So I decided to enlist the eggplant as my main course and essentially, plate for this pesto creation.

How do walnuts help fight disease?

Finding ways to kill cancer stem cells have been longstanding cancer research. Dr. Li has published numerous studies and one by Soul National University where walnut extract was studied for its ability to kill cancer stem cells. Quite a feat!

Crockpot Mahi Tacos

Anytime I eat Mahi I think of the Caribbean. Maybe because I had my first Mahi that I caught after deep sea fishing in the Bahamas years ago. I watched the whole process beginning to end and I guess I came up with an appreciation for the fish more than other fish. I also love the taste, especially fresh caught!

This brings me to my current dish and why the heck did I decide to make it in a crock pot? Who knows. All I know is that it turned out amazing. So juicy. The perfect consistency and all around perfect moisture level.

Leftover Series: Collard Quinoa Seitan Wraps (V, GF)

Every week, on Thursday’s I started doing this LIVE Facebook video where I would take all of my leftovers from my fridge and re-create or create something new with it all together. It’s become a fun project and my Facebook friends seem to really be a fan of it. So, in honor of that I think I’ll make this a regular weekly thing as long as I’m at home….shoot who knows where I’ll be and may want to reinvent something!

So this week I had a lot of leftovers because we were crazed this week and only had a couple meals at home. Here’s a list of my leftovers (some of which were not used)

Loaded Veggie Lasagna (GF)

started making veggie lasagna probably 6 years ago when I really started eating plant based and incorporating all the veggies I could into my diet. From that initial lasagna to the current one I’ve gone through several variations and the best thing about it is you can play with it and try seasonal veggies and add noodles, keep them out, anything goes here.

Whether you’re making this for yourself or your kids you’ll find that tastes vary and depending on what veggies you like or what veggies your kids will eat, just keep mixing it up and trying new things.

Grilled Eggplant & Marinated Tofu

This was really something I was dreaming up in my head and to be honest I didn't think it would live up to its expectations.  I mean, I like eggplant but it needs to be cooked really well with some major seasoning and/or marinade.  It lacks flavor and is really just a giant fibrous vegetable.  Thinking of vegetables, I really like to keep the variety in my palette.  Since this is purple it really keeps it mixed up and allows for me to have a full range of benefits.

Spinach Artichoke Pasta & Salmon

A NEW find with the spinach & artichoke pasta! Really loved this combo with some fresh bok choy from the farmers market! Very easy to make and total prep to plate was about 30 minutes! Very easy to make when you get home after a long day and don’t want to stress about cutting, prepping and creating something nutritious!

Strawberry Lemon Breakfast Bake

This recipe came out of nowhere.  I was in the mood for something refreshing like strawberry and lemon combination sounded delightful.  I also LOVE bakes so I really wanted to pair something in a form of a bake with these two flavors. 

I started looking at a ton of recipes - which I normally do to get inspiration.  Then I looked at what ingredients my mom had at her house.  I pulled out chia, hemp seeds, bananas, plant protein, oats, honey, coconut oil and she also had some eggs and I picked up fresh strawberries, lemons and eggs.  With that I figured I could some up with something so I just started mixing.  Meanwhile, my sister decided to sit and watch - with much anticipation I might add as well as some disbelief I could even make this work!

Paleo Baked Chicken Tenders

According to my husband, these turned out quite well!  It was a dabble in trying to create more "meat" friendly recipes.  Clearly as you can see by reading my blog and recipes that I do not eat meat, however that doesn't mean I don't prepare it.  My husband is a huge fan of all types of meat, poultry and I do make it for him on the reg!  This recipe was inspired by him wanting to eat chicken fingers - don't ask me why he had a craving but he was ready to order from the kids menu using our baby as an excuse to eat them!  Rather than him going that route, I decided I needed to try a new chicken recipe - and a healthy one at that - to help him satisfy his cravings:)
