Grain Free Breakfast Muffins (GF) (DF)

For being Grain FREE these muffins are pretty irresistible! Both my son, who’s 9 months, and my daughter, who’s 3 1/2 LOVED them! I’m a huge fan and as usual on this gut healing plan I’m not doing grains or sugar - aside from natural sugars in fruit so this was really surprising to me as many times I’ll also use bananas to sweeten but it wasn’t necessary!

These are a great breakfast snack topped with some almond butter OR as a healthy and hearty, fibrous snack during the day. Lots of flavor and surprisingly fluffy and lost of moisture!

I do this often and this is where I do find inspiration for my recipes. If I find something I like, I really pick it apart and go back to my kitchen and figure out how to make it. It’s like a little food mystery for me that I enjoy solving and to use for my benefit, and now for yours!

Low Sugar Cinnamon Granola (GF)

I always felt that I couldn’t eat granola because of its obscene sugar content - in even the healthy stuff! Which I’m bound to make a post on this soon! However, in the meantime you have to try this granola! So much crunchy, a hint of savor and great topping for your yogurt or even just grab and go breakfast or snack!

Today I realized the binder didn’t have to be sugar - aka honey or maple syrup or dates. It could simply be egg whites! Voila! There you have it!

Bakes, Bakes and more Bakes! Oatmeal is my jam if you already aren’t aware! I found this incredible oatmeal years ago at a little coffee shop in Holland, Michigan. I would go there a couple times a week to get this baked oatmeal and it was sinful to taste!

I like to keep things simple and I love a healthy breakfast that I can make for on-the-go because as a fitness instructor, personal trainer and health coach, my life is on-the-go! I like easy and I like variety!

Gluten Free, Dairy Free Banana Bread

I was just recently asked what type of recipes I post and my general answer would be healthy meals that are easy to make! Now I know that’s broad but that’s really what I strive to do. Most of my recipes are vegetarian, vegan or somewhat flexitarian. However, I give options so you can add in meat or poultry. I also like to provide recipes that I eat and that is usually gluten free, but not always, recently dairy free, but not always, so I don’t really know what to classify my recipes other than Flexitarian! So let’s go with that!

First, the recipe was beyond simple. If you stock any sort of gluten free flours at your home, have some bananas you are good to go with this recipes! I really don’t like over complicated recipes and the easier and healthier it is, the better!
