Baked Apples (GF) (DF)
While this was honestly one of my favorite warm snacks during this gut reset, it surprisingly has no added sugar. When you sauté or bake the apples, this natural sugaring process occurs and its simply delectable! That paired with butter or coconut oil and a few spices and you’re set!
I keep these in the fridge to warm up whenever I want to add extra toppings to my yogurt or to my N’ Oatmeal and just want something warm and sweet this is the ticket! It’s incredibly easy to make and I use my Instant Pot but you can just use the stovetop and they are just as grand!
It requires very little prep aside from slicing the apples the way you want them. I cut my apple in half or even into quarters and then start slicing away very fine slices. I also give these to my son, who is 9 months, and I cut them in half one more time just to make sure he can chew and swallow them. It gets a bit tricky for babies with the skin on and it ends of staying in his mouth way past the meal!
We both love them and make for great grab toppings when you’re making bowls! Lots of flavor, filling and hit the spot with the sweetness.
Now for the recipe!
Ingredients:
2-3 apples
1 pear (this is optional as I wanted to mix up my fruit!
2 tbsp butter or coconut oil
1/2 tsp cinnamon
1/2 tsp nutmeg
*optional 2 tbsp unsweetened coconut flakes
Directions:
For use in an Instant Pot turn the setting on “sauté” and add in your butter or oil.
While that melts, add in your apple slices and spices.
The Instant Pot gets quite hot and there is really only one setting for sauté so keep an eye on them and keep stirring. It takes approx 10-12 min for them to start to brown and soften. Once they get to that point, push “cancel” to turn off the Instant Pot. If you are preparing these stove top, keep the heat to medium heat while you occasionally stir until apples are coated and start to soften.
Remove and add as topping for yogurt (pictured here) or store in the fridge until you’re ready to use!
