Crust-less Veggie & Sausage Egg Casserole (GF)
I know this is out of my element to post an egg and sausage dish but truth is I really do make these once in a while specifically for my hubby who does a great job of eating a lot of my veggie dishes when his true love is meat!
So I decided to add in some maple chicken sausage and do a full on egg crust-less casserole. Of course, I had to add in all the veggies and topped it with some pretty delectable Parmigiano-Reggiano has a host of health benefits with its enzymes. That is, if it is used in its true and natural form which is hard to find in the US with the FDA regulations on cheese. However, I did find a beautiful raw cheese from Germany and its was quite delectable.
Why Parmigiano-Peggiano and not Parmesan?
1.) High Protein than other cheese
2.) Doesn’t contain lactose
3.) Contains a variety of vitamins and minerals such as : Calcium, Chloride, Magnesium, Potassium, Sulphur, Vitamin K2 AND Omega-3’s!
4.) While Parmesan does contain this same protein, it is in an easier to digest form than other varieties of cheese.
The reason for this is the extensive aging process that Parmesan goes through. During the aging, the lactic acid enzymes created from fermentation break the casein proteins down into smaller proteins.
5.) A great probiotic source as an aged cheese has numerous Lactobacillus bacteria species
After hearing all those great details about the cheese, let’s get to the HOW to make it!
It’s easy enough that my almost 2-year-old helped!
First, I chopped up veggies using fresh spinach, fresh yellow pepper, fresh basil leaves, shallots, and garlic.
Next, I took the chicken maple sausage and sauted it on the stove-top to cook it before I put it in the casserole.
Next, I whipped up a load of eggs with a splash of almond milk - because I never use milk - that’s not to say you cannot use milk here.
Lastly, I mixed everything together in a bowl and poured into an 8x8 glass baking dish that was pre-greased with nothing other than organic butter.
Check out the ingredients below:
4-6 fresh basil leaves
2 handfuls fresh spinach - chopped
10-12 Organic Eggs
1/4 cup almond milk (or milk of choice)
8 chicken maple sausage links
1 tbsp organic butter
1/2 cup bell pepper
1-2 chopped garlic cloves
1 shallot chopped
1/4 cup freshly grated Parmigiano-Reggiano
1/4 tsp sea salt
1/4 tsp black pepper
Directions:
Pre-grease 8x8 baking pan and preheat oven to 350 degrees.
Saute sausage in pan for 6-8 minutes or until golden brown
Pre-cut and wash your basil, spinach, bell pepper. Cut you shallot into small pieces along with your garlic.
Mix your eggs with milk and whisk. Add in veggies and 1/2 of the grated Parmesan. Add in your sea salt and pepper.
Chop the sausage and add to mixture.
Pour mixture into pre-greased baking pan and bake at 350 for approx 40 minutes. I kept covered for about 10 minutes then removed the cover to bake the entire way through.
