The Ultimate Chocolate Chip Cookie
Now I don't know about you but I LOVE my chocolate and LOVE my cookies - when they are freshly made. Even better is when they are clean, and use natural ingredients! Now these are possibly the most chewy, delectable and fresh tasting cookies you will have had - I promise! And you won't feel an ounce of guilt!
The secret is the mixture. Now keep in mind this mixture doesn't look like typical cookie dough. Its definely a more liquidy variation that looks gooey and slightly slimy. I know the sound of it doesn't sound tempting or the least bit appetizing BUT trust me they make great cookies as an end result!
What you will need:
- Large bowl
- Mixing spoon
- Cookie sheet
Ingredients:
- 1 cup peanut butter
- 3/4 cup whole grain oats
- 3/4 cup gluten free flour (I used a coconut/tapioca/almond flour blend)
- 1/4 cup agave sweetener
- 1/4 cup shredded unsweetened coconut flakes
- 1 egg
- 1/2 cup 60% Cacao chips
- 1 tsp baking soda
- 1 tsp baking powder
- 3/4 cup almond milk
Step 1: Mix the dry ingredients and add in the peanut butter and milk. Stir, stir, stir away until the mixture is smooth but as I described above - gooey, liquid and slimy! I like to add the peanut butter, mix and then add the milk little by little until the mixture is nice and smooth. Add the egg and continue mixing. If it looks to slimy and wet you can add a bit more oats or flour - use your discretion.
Step 2: Fold in the chocolate chips and continue to mix well.
Step 3: Take about 1-2 tbsp of batter (depending on the size of cookie you want). Spread out evenly on baking sheet. Space approx 1" apart. Batter should be approx 2-3" in diameter.
Step 4: Bake for approx 10 minutes. Until cookies are raised and just barely browned. So they are fully cooked through the center but not overcooked.
Let cool for 5-10 minutes and remove from pan to further cool. Enjoy! As always, if you want to share
