Gluten Free "Bacon" & Egg Breakfast Biscuit
So here we go, completely writing this again after a BIG fail yesterday! Oh well, we just roll with it, right?!?
A lot of people as me where I get my inspiration from and really I LOVE creating food in healthy ways. I’ll see seomthing or crave something and I just start mixing things toghether until it creates into something I’m into. that’s it! But sometimes, I’ll get inspiration from other food bloggers and try to re-create it, OR if I want to mke something but am not sure I’ll go to Pinterest and get the base idea and then create a healthy version. That is exactly what I did in this case.
I really had NO idea how to make biscuits. I remember making them with my mom as a kid and using Bisquick….and if you don’t know what that is, look it up! JK. Its a mix, but really I wanted to know HOW to make bicuits.
I follow this really incredible food blogger and she had made them in her description said, easy so I thought, this is exactly what I’m looking for!

After I had seen the ingredients, I realized I didn’t have Gluten Free all purpose flour so I decided to use a combo of what I did have and that was almond flour, coconut flour and tapioca starch. Voila…..gluten free flour!
Now I wasn't exactly sure these would turn out. In fact, I never am when I make a recipe but I keep going until I do make it taste worthy!
After continuing to read through the recipe, I decided I could do this and I was going to do this, butter and all! I didn't have a fancy pastry cutter, but we improvised so all good!
The last part was just deciding what to put on the biscuit. For me, I’m primarily vegetarian and also eat fish so call it what you want! I decided to add eggs AND some seitan bacon. My favorite brand is Uptons Naturals. Love the taste and very clean ingredients!
Now the eggs I always do egg whites. No particular reason and there’s nothing wrong with the yolk! I’ve just had a fear of yolk since I was a kid. My issue! lol
Of course we needed a zesty sauce and finally the greens! Get creative here. You can mix it up. Just because this is what I chose, doesn’t mean you have to do the same! improvise!
Without further ado, let’s get to the ingredients!
Biscuit Ingredient List:
1 cup almond flour
1/2 cup coconut flour
1/2 cup tapioca starch
1 teaspoon Xanthan Gum
1 teaspoon Fine Sea Salt
2 1/2 teaspoons Baking Powder
6 tablespoons Butter, Cubed and cold
3/4 cup flax milk
Directions for Biscuits: I took this right from What The Fork’s Blog! They turned out exactly how they look first try!
Preheat the oven to 425°F.
In a large bowl, whisk together the flour, xanthan gum, salt and baking powder. Use a pastry cutter to cut the butter into the flour mixture until it resembles coarse cornmeal.
Stir in the milk until incorporated. You may need an additional 1-2 tablespoons of milk to insure all the flour is moistened. Form the dough into a ball and knead about 10 times in the bowl.
Roll the dough out on a floured board to desired thickness (biscuits will not rise much while baking). I roll the dough to about 1 ½ - 2 inches thick. Use a 2 inch biscuit cutter to cut the biscuits. Gently re-roll dough as needed.
Place biscuits on an ungreased baking sheet and refrigerate for 30 minutes (uncovered) before baking. You can also make the dough a few hours ahead of time and leave refrigerated until ready to bake.
After 30 minutes chilling, bake 12-15 minutes or until done (cooking time will depend on thickness of the biscuit). Serve warm.
Store leftovers in an air-tight container or bag overnight or freeze.
Breakfast Sandwich Ingredients:
2 Egg whites
1 tbsp butter
1-2 pieces sauted kale or spinach
1/2 tsp pepper
1/2 tsp sea salt
2 slices Upton’s Naturals Seitan “Bacon”
1 slice non-dairy or dairy cheese
optional* 1 tsp nutritional yeast
1 tbsp Sir Kensington’s Vegan Mayo
Pinch of chili powder
1 tsp siracha
Directions for Sauce:
Mix mayo with siracha, chili powder and pepper. mix well and set aside.
Melt in 1 tbsp butter in to sauté pan. Cook 1-2 eggs or 2 egg whites in pan until fully cooked or slightly brown. Top with sea salt, pepper and *nutritional yeast.
Remove eggs from pan and throw in 2-3 pieces of seitan OR bacon and cook until slightly browned or crispy depending on how you like your bacon.
Remove bacon from pan and throw in a small handful of kale or spinach. Sauté in pan for just about a minute and remove from heat.
Use circular cutting tool that was used to cut the dough into circles OR in my case I used a mini jar to cut the cheese to exactly match the bun. However, you can just throw the whole piece of cheese on there!
Top with cheese, add eggs, then bacon, then sauce and top with greens! And bite into some delicious goodness!
