Chocolate Coconut Chia Pudding Parfait (GF) (V)

Trying to find low sugar and grain free recipes has been both challenging and fun. I like interchanging these as breakfast ideas as well as just for a mid-afternoon snack! Lots of protein, lots of fiber and healthy fats to keep feeling satisfied.

This is great meal prep to make ahead for the week or even a few days. It is super easy to add to you fruit or just eat on its own! I pre-made these in little mason jars with fruit to make it a quick grab-and-go option when I’m feeling the need for a chocolate fix or just want a quality snack!

I’ll keep this short and simple and list out the ingredients below. This makes about 4-6 servings depending on if you’re using it for a parfait or just eating it own its own. It does require overnight storage in the fridge so don’t get too excited if you’re hoping for a snack NOW! This is definitely a make-ahead snack!

Ingredients:

  • 1/2 can Full Fat Coconut Milk (I did the Natural Grocers version here)

  • 2 TBSP Unsweetened Cacao powder

  • 1/2 cup Unsweetened vanilla almond milk

  • 1/2 cup chia seeds

  • 2 tbsp Shredded Unsweetened coconut flakes

Directions:

  1. First shake the can of coconut milk to make sure it mixes before you open the can. Once opened, it may still be hard at the top so just take a spoon and mix it well. Take half of the mixed can and pour into a bowl. Add in the almond milk and whip it well! Make sure to keep whipping until its fully mixed and there are no chunks left in the bowl.

  2. Add in the chia seeds and unsweetened coconut flakes. Keep mixing until fully mixed and put lid on the glass bowl (or in Tupperware dish or mason jar) and store in fridge overnight.

  3. In the morning, mix again as the top may have hardened. Then you can make your parfait. Take about 1 tbsp of nuts (I used pecans on the bottom), pour over with chia pudding (approx 2 tbsp) then add your fruit, then another layer of chia pudding followed by another tbsp of nuts (I used walnuts as well). Again, you can make ahead about 4 of these or just keep in the larger bowl till you want to use it. Top with honey if desired.
