Chocolate Chip Miso Cookies (GF) (DF)

Two things I never would have thought to put together. Chocolate chip cookies and Miso! I mean?!? Who would’ve thought?!?

But, because I love and trust Candice Kumai and loved her book so much I decided to give it a try - just made a few edits for my own dietary preferences - however I’m sure these are perfectly amazing as is! But you’ll have to get the book for that version in Kintsugi Wellness

I always like to play with flour and since I’m trying to add in a bit more carbs into my diet because I’ve went 3 months very low carb, I figured this was the place to start! I mixed up the flour with 1/3 part oats, 1/3 part gluten free flour, which was also a flour combo in itself.

Then I opted for coconut sugar and cut it in half. I also wanted to add in some almond butter because I always feel like it brings so much to the texture.

Ingredients:

  • 2 eggs

  • 1 - 1/2 TBSP Coconut Oil

  • 1/4 cup Almond Milk

  • 1 cup Gluten Free Flour (blend that includes tapioca starch, brown rice flour)

  • 1/2 cup blended oats - to make oat flour

  • 2 tbsp almond butter

  • 1/4 cup organic coconut sugar

  • 1 tsp vanilla extract

  • 2 tbsp organic white miso paste

  • 1/2 tsp baking soda

  • 1/2 cup chocolate chips

Directions:

  1. Blend oats in food processor until flour like - or use oats as is and blend with mixture. I like this extra step because it refines it a bit more or you can but regular oat flour.

  2. Preheat oven to 325 degrees. grease with coconut oil

  3. In bowl or mixer blend sugar, coconut oil, vanilla, miso paste and almond milk. Add in the eggs. Blend

  4. Fold in the flour and baking soda with spatula and mix well to combine both wet and dry ingredients.

  5. Fold in chocolate chips

  6. Using a tablespoon scoop cookies and line them on sheet - evenly spaced apart.

  7. Bake cookies for 12 to 13 minutes. Remove from the oven and transition to parchment paper to let cool. Store cookies in airtight container or in fridge for up to a week.
