Coconut Low Carb Yogurt (DF) (GF)

This was a little combo I started putting together when I went Suuuuper low carb and low sugar last spring and summer to heal my gut and this was one of the delicious outcomes! It’s packed with nutrients and is so I easy to make in big batches for the entire week!

I tried to work with as many nuts and seeds and super food add on’s that I have in my cabinet and usually can always come up with a seed, a nut and some fruit to top it!

The best thing about this is that it has gut healthy yogurt and you can use dairy or non-dairy(I used almond yogurt here) but its completely up to you! The other part is the amount of crunch that goes into each but it strangely satisfying! Excited to share this to make your mornings that much easier!

Ok, let’s get to what you need to make this concoction!

food processor (optional) I like this to really grind up everything but its not necessary!

For ingredients:

  • 1/4 cup Non-Dairy OR Dairy Greek Yogurt. I chose Kit Hill Almond yogurt that I love. Unsweetened of course.

  • 1/3 cup unsalted pumpkin seeds or your seeds of choice!

  • 1/4 cup nuts (walnuts, almonds, cashews all work)

  • 1/2 cup unsweetened coconut flakes

  • 2 tbsp chia seeds

  • 2 tbsp hemp seeds (for your complete protein

  • handful fresh blueberries

  • 1-2 tbsp almond butter

  • 1/4 tsp vanilla extract

  • 1 tsp raw honey (optional)

Directions:

  • Combine all ingredients into food processor or bowl to mix (aside from the fresh fruit, almond butter and honey - those will be toppings)

  • Mix well and pour into single serve bowl and top with your fruit, almond butter and honey if desired.

  • Store in air tight container and keep refrigerator.
