Blueberry Oat Pancakes (GF)
I was beyond thrilled then I came up with this recipe this morning while looking for a sustainable high protein breakfast for myself. I really wanted oats but didn’t want that glucose spike so I usually need to add a lot of protein to my oats and this time I came up with something delicious and loaded with protein(10g per pancake)!
They have tons of flavor and VERY filing! I ate these as a pre-workout and I wasn’t hungry until about 5 hours later which is BIG for me! So this iwas a huge one and one recipe I had to post STAT!
My goal for this blog and for everything I do is to share what I find for myself and enable you all to make healthy decisions at home easier! It helps me eat healthier and my hope is that you find the same enjoyment in food that is truly good and nourishing for your body and mind!
For this recipe I wanted to blend things up so I put the seeds and the oats in the blender to ensure it was nice and smooth to be the consistency of flour before I started adding anything else. That was my baseline. You certainly don’t have to do that and you can’t just even use oats instead of the seeds but I wanted something with more grit in my pancakes to stay with me so I chose to add the seeds.
Second, the fillings like eggs and greek yogurt are for consistency and protein added. It make them super fluffy and made them a lot more filling as well!
The banana was my sweetener and I just mashed that in towards the end. You can use maple syrup or even honey but I liked the banana because it make it so fluffy and sweet at the same time.
Feel free to sub out any dairy for non-dairy items. I liked the added protein here and also added some fluffiness and stuck with me more than 4 hours after breakfast which is huge, especially after a workout!
Recipe:
1/2 cup whole grain GF oats (I like Bob’s Red Mill oats)
1/4 cup pumpkin and sunflower seeds mixed
1 egg
1/2 cup organic greek yogurt
1/4 tsp coconut oil
1 mashed banana
1 tsp cinnamon
1 tsp vanilla
3/4 - 1 cup fresh blueberries
Directions:
Blend oats + seeds + cinnamon to blend up into flour-like consistency.
Add in the egg, greek yogurt, banana, and vanilla. This can be also in the blender or you can combine and mash in a bowl, its up to you! I prefer to throw it all in and blend.
Heat stovetop to medium-low and grease flat pan with coconut oil. place about 1/4 cup in a round space and repeat until you have 4 medium sized pancakes. add in the blueberries one by one to each pancake while they are cooking that way the blueberries stay nice and plump!
Heat about 3-4 minutes on one side and flip. Repeat for opposite side or until pancakes are lightly browned.
