Plant Based Cannellini Kale Ravioli with Kale Salad
Sometimes I like to keep packaged items in the freezer after a long day where I have no desire to do anything. Especially cook! I pull things out like store bought veggie burgers, a pizza crust, these amazing ravioli like I’m about to show you or maybe even a frozen organic meal once in a while.
I came across this brand at Whole Foods but it can be bought other places as well. I also found that this type of ravioli can be brought from various brands including Rising Moon, Wegmens, or you could do something like this from Meijer, or something like this from WalMart to give you a few options. I purchased the Engine 2 Kale Cannelloni Ravioli which was loaded with whole grains, protein and wholesome ingredients especially for a packaged food item. So if you have access to this type of product, get it! If not, try one of the options above!
I happened to have Kale in the fridge AND Trader Joe’s Kale cashew pesto so I was able to use those up after coming home from a long weekend away.. However, if you don’t have these things, don’t worry! Use what you have! Add a vegetable - preferably green, and some tomato sauce if you have some or try just olive oil and some basil and garlic. A nice pairing would be some fresh spinach and olive oil with sea salt! Super simple!
The directions are pretty straight forward as you would cook the ravioli as you normally would, boil in water and etc. Drain and add sauce. Same thing here. Just making a side salad!
I made the salad while the ravioli was cooking so this worked out perfectly and no more than 10 minutes beginning to end! I added in what I also had in my cabinets which were some walnuts, hemp seeds and nutritional yeast. If you don’t want to go totally plant based you can add in some Parmesan cheese, olive oil and that’s it! Or get creative and throw in whatever you may have in your cabinets!
Ingredients:
! Package of Engine 2 Kale Cannelloni Ravioli (or one of the other options listed above)
2 cups water
1 tsp sea salt
2 tbsp Kale Cashew Pesto from Trader Joe’s OR just simple tomato sauce is great here too!
1 bunch fresh kale (or other green)
2 tbsp olive oil
1 tsp nutritional yeast *optional
1 -2 tbsp walnuts *optional
Directions:
Bring water to boil. Add 1/4 tsp sea salt. Add pasta. Cook for approx 3-5 minutes or until soft. Drain and set aside.
While pasta is cooking rinse kale leaves and remove the leaves from the stem. Chop Kale into more bite-sized pieces and toss into bowl.
Add in 1-2 tbsp olive oil and massage with hands for about 3 minutes or until Kale has softened. Top with nutritional yeast, walnuts and hemp seeds. (or whatever you have for your salad topping)
Add sauce or in this case, pesto to ravioli and toss into salad OR have with salad as a side dish.
Keep in mind, my recipes try to inspire you to eat more veggies but in a non-invasive way using what you already have!
